Luis, AKA “Bowtie Lui,” takes his craft and mixology expertise beyond the shaker, aiming to create a captivating multi-sensorial guest experience for his bar patrons. As a celebrated expert within the community having recently been named “Best Bartender” by OC Weekly 2019, with the help of his team, Luis aims to make the destination a more diverse, notable community in the world of spirits. His innovative approach to craft cocktails and spirits often encourages him to think outside the norm and even break the rules with precise creative intent. Luis was part of the opening team for Gracias Madre Newport Beach sister to the famous WEHO Gracias Madre. Running an all agave program in an area where agave is still seen as a novelty was a perfect challenge and great learning experience for Lui. COVID-19 stopped his time at Gracias Madre, where he left his mark as the location to find the best agave selection in South Orange County. Now he is in charge as the Beverage  Director for Mayfield in San Juan Capistrano. Where the food and beverage make a pairing with flavors from the Levant Mediterranean Region.
